Ingredients for 12 Servings

  • Dough:
    240ml Warm Milk
    2 1/4 teaspoons Active Dry Yeast
    3 tablespoons Brown Sugar
    85g Unsalted Butter, softened
    500g All-Purpose Flour, sifted

    Apple Filling:
    100g Brown Sugar
    100g White Sugar
    2 tablespoons Apple Pie Spice
    Apple Pie Spice:
    Start with a base blend of 3 or 4 tablespoons of cinnamon to 1 1/2 to 2 teaspoons of nutmeg, then build your personal apple pie spice using a combination of any of the following ground spices:
    1 to 1 1/2 teaspoons allspice
    1 to 1 1/2 teaspoons cardamom
    1/2 to 1 teaspoon dry ground ginger
    1/2 teaspoon cloves
    1/2 teaspoon mace
    A pinch of dried lemon peel


    85g Unsalted Butter, softened
    2 Red Apples, diced
    Some breadcrumbs, if the filling should be too wet.

    Frosting:
    40g Melted Butter
    200g Philadelphia Cream Cheese
    50g Confectionery Sugar
    2-3 tablespoons Milk
    1/2 teaspoon Ground Vanilla
    1 tablespoon Cinnamon (only if you are a cinnamon junkie, otherwise just leave it out and enjoy the frosting)
    2 tablespoons Caramel Sauce, plus extra for drizzling

Method
    1. Activate the Yeast:
      In a bowl, combine warm milk, active dry yeast, and brown sugar. Let it sit for 5-10 minutes until the yeast activates and becomes frothy.
    2. Prepare the Dough:
      In a large mixing bowl, combine the yeast mixture, softened butter, and sifted flour. Knead the dough until it becomes smooth and elastic. Place the dough in a greased bowl, cover it, and let it rise for about 1-1.5 hours or until doubled in size.
    3. Prepare the Apple Filling:
      In a bowl, mix brown sugar, white sugar, apple pie spice, and softened butter. Fold in the diced apples and set aside.
      If it generates too much fluid, add some breadcrumbs, if you have ’em.
    4. Roll and Fill:
      Roll out the dough into a rectangle. Spread the apple filling evenly over the dough. Roll it into a log and cut into even slices.
      With a little bit of flour and a sprinkle of water, you create a “glue” to close the rolled dough. Spread your “glue” along the edge of the dough to firmly seal it up.
    5. Arrange and Rise:
      Use a tread to cut the rolls, so they will not get “squished”. Slide the thread under the roll, cross the ends of the thread over the roll and pull slowly in opposite direction to “cut” the roll in to approximatively 2cm slices.
      Place the slices in a greased (I use butter) baking dish. Cover and let them rise for another 30 minutes.
    6. Preheat the Oven:
      Preheat your oven to 180°C (350°F). Top and bottom heat.
    7. Bake:
      Bake the apple pie cinnamon rolls in the preheated oven for 25-30 minutes or until golden brown.
    8. Prepare the Frosting:
      In a bowl, mix melted butter, Philadelphia cream cheese, confectionery sugar, milk, ground vanilla, cinnamon, and caramel sauce until smooth.
    9. Frost and Drizzle:
      Once the apple pie cinnamon rolls have cooled slightly, spread the frosting over them and drizzle with extra caramel sauce.
    10. Serve and Enjoy:
