Arugula Mango Salad with Cilantro Lime Dressing

For the Salad:
200g arugula (also known as “rocket” in British English)
2 ripe mangoes, peeled, pitted, and cubed
1/4 red onion, thinly sliced
50g roasted pumpkin seeds (pepitas)
Salt and freshly ground black pepper, to taste
For the Cilantro Lime Dressing:
30g fresh cilantro leaves, finely chopped
Juice of 2 limes
60ml extra-virgin olive oil
1 garlic clove, minced
5g honey (optional, for sweetness)
Salt and freshly ground black pepper, to taste

1. Prepare the Cilantro Lime Dressing:
In a bowl, whisk together the fresh cilantro, lime juice, extra-virgin olive oil, minced garlic, and honey (if using).
Season the dressing with salt and freshly ground black pepper to taste. Set aside.2. Assemble the Salad:
In a large serving bowl, place the arugula (rocket).
Add the cubed mangoes and thinly sliced red onion on top of the arugula.
Drizzle the prepared Cilantro Lime Dressing over the salad.
Sprinkle the roasted pumpkin seeds (pepitas) on top.3. Toss and Serve:
Gently toss all the ingredients together to evenly coat the salad with the dressing.
