    3 tablespoons milk
    1 egg
    1 pinch baking powder
    1 onion
    1 garlic clove
    10g grated ginger
    15g chopped coriander
    Frying oil (1 liter)
    Salt and pepper for seasoning

Method
    1. Prepare the Eggplants:
      • Wash and dry the eggplants, then cut them into thin slices.
    2. Make the Batter:

      • Finely chop the onion, garlic, and coriander.

    3. Heat Up The Oil:
      • Heat the frying oil in a high pan.
    4. Fry the Eggplants:
      • Dip each eggplant slice into the batter, ensuring it’s well-coated, and then carefully place it in the hot oil.
      • Fry until the beignets are golden brown and crispy.
      • Remove from the oil and place on a paper towel to absorb excess oil.
      • Repeat the process with the remaining eggplant slices.
    5. Serve and Enjoy:
