- Prepare the Tangzhong:
- In a pan, combine 30g water, 60g milk, and 20g bread flour. Heat over low-medium heat, stirring continuously until the mixture thickens to a porridge-like consistency. Let it cool completely.
- Prepare the Dough:
- In a mixing bowl, sift 320g of bread or all-purpose flour. Add dried instant yeast, salt, sugar, and milk powder. Mix these dry ingredients before placing the bowl into the machine. Then, add the cooled tangzhong, the egg, butter and water. Mix at low speed until combined. Knead the dough in the machine for 10-15 minutes until it’s smooth.
- Hand Kneading:
- Transfer the dough onto a flat surface and knead it by hand until it becomes firm and elastic. Roll it into a ball and give it a firm slap. Place the dough in an oiled bowl, cover it, and let it rise for 1 hour, or until it doubles in size.
- Shaping:
- After the dough has risen, punch it down and transfer it to a flat surface. Cut it into 6 equal pieces. Fold in the edges to the center and roll into balls. Place the balls on a baking tray, leaving enough space between them. Cover them and let them rise for another hour.
- Egg Wash and Topping:
- Whisk 1 egg with 1 tablespoon of milk. Brush this mixture over the buns. Sprinkle sesame seeds on top for added flavor and texture.
- Baking:
- Preheat the oven to 190°C (375°F). Bake the buns for 15 minutes or until they are golden brown and sound hollow when tapped on the bottom.
