    120g sour cream
    1 tablespoon granulated sugar
    1/2 teaspoon almond extract

    For the Cherry Filling:

    500g fresh cherries, pitted and halved
    75g granulated sugar
    2 tablespoons cornstarch
    1 tablespoon lemon juice
    Zest of 1 lemon
    1/2 teaspoon almond extract

    For Assembly:

    1 egg, beaten (for egg wash)
    1 tablespoon turbinado sugar (for sprinkling)

    1. Prepare the Almond Sour Cream Crust:
      • In a large mixing bowl, combine the all-purpose flour, ground almonds, and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to blend the mixture until it resembles coarse crumbs.
      • In a separate bowl, mix the sour cream, granulated sugar, and almond extract. Add the sour cream mixture to the flour mixture and stir until the dough comes together. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 1 hour.
    2. Prepare the Cherry Filling:
      • In a bowl, combine the pitted and halved cherries, granulated sugar, cornstarch, lemon juice, lemon zest, and almond extract. Toss the mixture gently to coat the cherries evenly. Let it sit for about 15 minutes to allow the flavors to meld.
    3. Assemble the Galette:
      • Preheat your oven to 190°C (375°F). Line a baking sheet with parchment paper.

      • Arrange the cherry filling in the center of the dough, leaving about a 5cm (2-inch) border around the edges. Fold the edges of the dough over the filling, creating pleats as you go. Press gently to seal the edges.
      • Brush the edges of the galette with the beaten egg and sprinkle the turbinado sugar over the top.
      • Bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the filling is bubbling.
      • Remove the galette from the oven and let it cool on the baking sheet for 10 minutes before transferring it to a wire rack to cool completely.
