Method
    1. Prepare the Almond Sour Cream Crust:
      • In a large mixing bowl, combine the all-purpose flour, ground almonds, and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to blend the mixture until it resembles coarse crumbs.
      • In a separate bowl, mix the sour cream, granulated sugar, and almond extract. Add the sour cream mixture to the flour mixture and stir until the dough comes together. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 1 hour.
    2. Prepare the Cherry Filling:
      • In a bowl, combine the pitted and halved cherries, granulated sugar, cornstarch, lemon juice, lemon zest, and almond extract. Toss the mixture gently to coat the cherries evenly. Let it sit for about 15 minutes to allow the flavors to meld.
    3. Assemble the Galette:
      • Preheat your oven to 190°C (375°F). Line a baking sheet with parchment paper.
      • On a lightly floured surface, roll out the chilled dough into a circle about 30cm (12 inches) in diameter and 0.5cm (1/4 inch) thick. Transfer the rolled-out dough onto the prepared baking sheet.
      • Arrange the cherry filling in the center of the dough, leaving about a 5cm (2-inch) border around the edges. Fold the edges of the dough over the filling, creating pleats as you go. Press gently to seal the edges.
      • Brush the edges of the galette with the beaten egg and sprinkle the turbinado sugar over the top.
      • Bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the filling is bubbling.
      • Remove the galette from the oven and let it cool on the baking sheet for 10 minutes before transferring it to a wire rack to cool completely.
      • Serve slices of the Cherry Galette with a dollop of whipped cream or a scoop of vanilla ice cream, if desired.
    Pro Tips
    • Ensure the butter and sour cream are cold to achieve a flaky crust.
    • You can refrigerate the galette for up to 2 days. Reheat in the oven at 180°C (350°F) for about 10-15 minutes before serving.
