Ingredients for 4 Servings

  • For the Chipotle Shrimp:

    500g large shrimp, peeled and deveined
    2 tablespoons olive oil
    2 cloves garlic, minced
    1 teaspoon chipotle chili powder (adjust to taste)
    Salt and pepper to taste
    Juice of 1 lime

    For the Cilantro Lime Rice:

    1 cup long-grain white rice
    2 cups water
    Zest and juice of 1 lime
    2 tablespoons fresh cilantro, chopped
    Salt to taste

    For the Black Bean and Corn Salsa:

    1 can (400g) black beans, drained and rinsed
    1 cup corn kernels (fresh, frozen, or canned)
    1/2 red onion, finely chopped
    1 red bell pepper, diced
    1/2 cup chopped fresh cilantro
    Juice of 1 lime
    Salt and pepper to taste

    For Assembly:

    Guacamole or sliced avocado
    Sour cream
    Salsa
    Shredded lettuce
    Shredded cheese (optional)
    Sliced jalapeños (optional)

  1. For the Chipotle Shrimp:

    • Marinate the Shrimp:
      • In a bowl, combine the peeled and deveined shrimp with olive oil, minced garlic, chipotle chili powder, salt, pepper, and lime juice. Toss to coat evenly.
      • Let the shrimp marinate for 15-20 minutes.
    • Cook the Shrimp:
      • Heat a large skillet over medium-high heat.
      • Add the marinated shrimp and cook for 2-3 minutes per side or until they turn pink and opaque.
      • Remove from heat and set aside.

    For the Cilantro Lime Rice:

    • Cook the Rice:
      • Rinse the rice under cold water until the water runs clear.
      • In a saucepan, bring 2 cups of water to a boil.
      • Add the rice, reduce heat to low, cover, and simmer for about 18 minutes or until the rice is cooked and the water is absorbed.
    • Flavor the Rice:
      • Fluff the cooked rice with a fork.
      • Mix in the lime zest, lime juice, chopped cilantro, and a pinch of salt.

    For the Black Bean and Corn Salsa:

    • Prepare the Salsa:
      • In a bowl, combine the drained and rinsed black beans, corn kernels, finely chopped red onion, diced red bell pepper, chopped cilantro, lime juice, salt, and pepper. Mix well.

    For Assembly:

      • In individual bowls, start with a base of cilantro lime rice.
