  1. For the éclair shells:

    • 1 batch of pâte à choux (follow the pâte à choux recipe mentioned earlier)

    For the filling:

    • 2 cups of pastry cream or sweetened whipped cream (your choice)

    1. Prepare the éclair shells:
    Follow the pâte à choux recipe provided earlier to make the éclair shells. Pipe the dough into oblong shapes on a baking sheet and bake as instructed until they are golden brown and crisp. Allow them to cool completely.

    2. Prepare the filling: You can choose between two traditional éclair fillings:

    • Pastry Cream: Prepare a batch of pastry cream, a custard-like filling. Let it cool completely before using.
    • Sweetened Whipped Cream: Whip 2 cups of heavy cream with 2 tablespoons of powdered sugar until stiff peaks form.

    3. Fill the éclairs:
    Slice the cooled éclair shells in half horizontally. Fill the bottom halves with your choice of pastry cream or sweetened whipped cream.

    4. Prepare the chocolate glaze:

    • In a saucepan, heat 100 ml of heavy cream over medium heat until it begins to simmer.
    • Remove the saucepan from the heat and add 100 grams of dark chocolate and 2 tablespoons of unsalted butter. Let it sit for a minute to melt.
    • Stir the mixture until the chocolate and butter are fully melted and the glaze is smooth. If you prefer a sweeter glaze, you can add 2 tablespoons of powdered sugar and stir until dissolved.
    • Let the glaze cool slightly but use it while it’s still warm for easy pouring.

    5. Frost the éclairs:
    Dip the top halves of the filled éclair shells into the warm chocolate glaze or use a spoon to drizzle the glaze over the tops.
    Allow any excess glaze to drip off.

    6. Serve and enjoy:
