1. Prepare the Dough:
a. In a small bowl, combine the lukewarm milk, lukewarm water, instant yeast, and 2 tablespoons of sugar. Let it sit for about 5-10 minutes until it becomes frothy.
b. In a large mixing bowl, combine the all-purpose flour, 2 tablespoons of brown sugar, salt, and a pinch of nutmeg.
c. Make a well in the center of the dry ingredients and add the yeast mixture, vanilla extract, eggs, and 50g of room temperature butter.
d. Mix everything together until a dough forms. You can use a stand mixer with a dough hook attachment or knead by hand on a floured surface.
e. Knead the dough for about 5-7 minutes until it becomes smooth and elastic.
2. First Rise:
a. Place the dough in a greased bowl and cover it with a clean kitchen towel or plastic wrap.
b. Allow the dough to rise in a warm place for about 1-2 hours, or until it has doubled in size.
3. Prepare the Filling:
a. In a small bowl, mix together 100g of brown sugar and 2 tablespoons of ground cinnamon.
b. Soften 50g of butter.
4. Assemble the Cinnamon Rolls:
a. Roll out the risen dough on a floured surface into a rectangle, approximately 14×10 inches.
b. Spread the softened butter evenly over the dough.
c. Sprinkle the brown sugar and cinnamon mixture evenly over the buttered dough.
d. Starting from the long edge, roll the dough into a log.
e. Cut the log into 12 equal slices.
5. Second Rise:
a. Place the cinnamon roll slices in a greased baking dish or on a lined baking sheet.
b. Cover them with a kitchen towel or plastic wrap and let them rise for another 30-45 minutes.
6. Preheat and Bake:
a. Preheat your oven to 180°C (350°F).
b. Once the rolls have risen, bake them in the preheated oven for 25-30 minutes, or until they are golden brown.
7. Prepare the Cream Cheese Frosting:
a. While the rolls are baking, make the cream cheese frosting by beating together the room temperature cream cheese, room temperature butter, powdered sugar, and vanilla extract until smooth. Add milk as needed to reach your desired consistency.
8. Finish and Serve:
a. Once the cinnamon rolls are done baking and have slightly cooled, drizzle them generously with the cream cheese frosting.
