For the Dough:
600g All-Purpose Flour
300ml Milk (Room Temperature)
7g Dry Yeast or 1/2 cube (21g) Fresh Yeast
110g Liquid Butter
80g white Sugar
1 tablespoon Vanilla Extract
1 teaspoon Salt
Some heavy creme for the baking dish
For the Filling:
110g Butter, Room Temperature
200g Raw Sugar
70g Floral Honey (Optional)
2 1/2 teaspoons Cinnamon
1 tablespoon Heavy Cream (if the mixture is too thick)
For the Frosting:
175g Philadelphia Cream Cheese
80g Butter, Room Temperature
80g Powdered Sugar
40ml – 50ml Heavy Cream (for the baking dish)

- Prepare the Dough:
- Lukewarm milk.
In the milk, add the yeast, stir briefly, and let it sit for at least 5-10 minutes (this activates the yeast). - In a bowl, combine the flour, forming a well; first add the liquid ingredients and then the dry ingredients.
- Knead everything into a dough. Use flour for kneading. The dough should be soft but hardly sticky!
- Once too much flour is in the dough, the cinnamon rolls won’t be fluffy and soft, so be careful not to add excessive flour!!!
- Let the dough rise, covered airtight, in a warm place for at least 1-1.5 hours.
- To expedite, you can preheat the oven to 50 degrees Celsius with the fan on.
Place the covered bowl in the oven for 20 minutes with it on and another 20 minutes with it off for the dough to rise.
- Lukewarm milk.
- Make the Filling:
- Meanwhile, prepare the filling.
- Take the butter and beat it until the colour changes from dark yellow to a light yellow.
- Add the remaining ingredients and mix briefly until a homogeneous mixture is formed (it should be easily spreadable).
- Roll and Fill:
- Once the dough has risen (at least doubled in size), press out the air and roll it into a square, about 0.5 cm thick, using some flour.
- Once you’ve evenly rolled out your dough, spread your filling evenly over the dough.
- Now, roll the dough carefully.
- Take a piece of thread, press it slightly into your pieces to define the size of the rolls before cutting to get equally sized pieces.
- To cut the rolls, pass the thread under the dough roll, against the countertop, so you do not crush them by lifting.
- Cross the thread over the roll of dough and pull towards each other to cut the pieces.
- Arrange in a Baking Dish:
- Place the rolls in your baking dish (preferably a glass or ceramic dish). Let them rest covered for another 15-20 minutes.
- Before putting them in the oven, pour some cream on the bottom of the baking dish.
- Bake:
- Heat up your oven to 170°C. Top and Bottom heat.
- Place the rolls, on a rack tray, in the oven. Not all the way at the bottom, maybe the second or third rail from the bottom.
- Bake the cinnamon rolls for 20-25 minutes or until golden brown.
- Prepare the Frosting:
- While the cinnamon rolls bake, prepare the frosting. Take sifted powdered sugar and mix it with the soft butter and Philadelphia.
- Frost the Rolls:
- After the cinnamon rolls come out of the oven, let them cool a bit. The frosting should be applied when they are no longer hot but still warm.
- Serve and Enjoy:
- Serve these fluffy cinnamon rolls warm but not hot. Letting the cream cheese frosting melt slightly.
