1. Prepare the Custard Base: In a heatproof bowl, whisk together the egg whites and sugar. Place the bowl over a pot of simmering water (double boiler) and whisk continuously until the sugar is completely dissolved, and the mixture reaches a temperature of about 70°C (160°F). You can test this by rubbing a bit of the mixture between your fingers; it should be smooth and not grainy. Remove the bowl from the heat and allow the custard base to cool to room temperature.
2. Whip the Custard: Using an electric mixer, beat the cooled custard base on medium-high speed until it becomes thick, pale, and holds its shape. This may take about 10-15 minutes.
3. Add the Butter: Gradually add the room-temperature butter, one piece at a time, while continuing to beat the custard. Ensure each addition is fully incorporated before adding more. Continue to beat until the mixture becomes smooth, creamy, and resembles fluffy buttercream.
4. Flavor (Optional): You can add flavorings of your choice at this point, such as vanilla extract, melted chocolate, or other extracts. Beat until well combined.
5. Use or Store: Your Metric German Buttercream is now ready to use as a frosting for cakes, cupcakes, or other desserts. Alternatively, you can store it in an airtight container in the refrigerator for up to a week or in the freezer for a few months. When ready to use after refrigeration or freezing, allow it to come to room temperature and rewhip for a few minutes to restore its creamy texture.
