    5 green chilies, sliced (adjust for desired spice level)
    1 shallot, peeled and chopped
    4 cloves garlic, peeled
    1 thumb-sized piece of galangal, peeled and sliced
    1 thumb-sized piece of ginger, peeled and sliced
    Zest of 1 lime
    2 tablespoons coriander roots, chopped
    1 teaspoon ground coriander
    1 teaspoon ground cumin
    1/2 teaspoon white pepper
    1 teaspoon shrimp paste (optional, for non-vegetarian version)
    1 bunch fresh coriander, stems and leaves
    1 bunch fresh basil, leaves
    2 kaffir lime leaves, finely chopped
    1 teaspoon salt
