Method
    1. Prepare the Dough:
In a large mixing bowl, combine the bread or all-purpose flour, instant yeast, white sugar, salt, brown sugar, cinnamon, and allspice. Make a well in the center and add lukewarm milk, beaten egg, and melted butter. Mix until a sticky dough forms. Knead on a floured surface for about 10 minutes or until the dough becomes smooth and elastic. Incorporate the dark chocolate chips during the last few minutes of kneading.
    2. First Rise:
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm, draft-free place for about 1 to 1.5 hours or until it doubles in size.
    3. Shaping the Buns:
After the first rise, punch down the dough and divide it into 12 equal portions. Shape each portion into a bun and place them on a baking tray lined with parchment paper, leaving a small gap between each bun.
    4. Prepare the Crossing:
In a small bowl, mix the all-purpose flour and water to form a thick paste. Transfer the paste into a piping bag and pipe a cross over the top of each bun.
    5. Second Rise:
Cover the buns with a clean cloth and let them rise for another 30 minutes to 1 hour, or until they become puffy and almost double in size.
    6. Bake:
Preheat the oven to 180°C (350°F). Bake the buns for 20-25 minutes or until they are golden brown and sound hollow when tapped on the bottom.
    7. Prepare the Glaze:
While the buns are baking, prepare the glaze. In a small saucepan, heat the icing sugar and water over low heat until the sugar dissolves and the glaze thickens slightly.
    8. Finishing Touch:
Once the buns are out of the oven, brush them with the warm glaze while they are still hot.
    9. Cooling:
Allow the buns to cool on a wire rack. Enjoy these delightful Hot Cross Buns warm or toasted with a slather of butter.
    Pro Tips
    • For a tender crumb, allow the dough to rise until doubled in size during both rising stages.
    • Incorporate chocolate chips gently at the end of kneading to distribute them evenly.
    • Warm the glaze slightly for easy brushing and a glossy finish.
    • Serve buns fresh out of the oven or lightly toasted with a dollop of butter for an indulgent treat.
