Ingredients for 25 – 30 Servings

  • For the Filling:
    500g pumpkin, peeled, seeded, and chopped
    1 medium onion, finely chopped
    2 tbsp olive oil
    1/2 cup raisins
    1/4 cup pine nuts
    1/2 tsp ground cinnamon
    1/4 tsp ground nutmeg
    1/4 cup chopped fresh mint or parsley
    Salt and pepper to taste

    For the Pastry:
    250g all-purpose flour
    125g cold butter, cubed
    1/4 tsp salt
    1/4 cup cold water (more if needed)

    1. Prepare the Pumpkin Filling:
      • Steam or boil the chopped pumpkin until tender, about 10-15 minutes. Drain well and mash the pumpkin until smooth.
      • In a skillet, heat olive oil over medium heat. Sauté the chopped onion until soft and translucent.
      • Add the mashed pumpkin, raisins, pine nuts, cinnamon, nutmeg, and mint or parsley to the skillet. Stir to combine and cook for another 5 minutes. Season with salt and pepper. Remove from heat and let cool.
    2. Prepare the Pastry:
      • In a large bowl, combine flour and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
      • Gradually add cold water, mixing until the dough comes together. Avoid overworking the dough. Wrap in plastic wrap and refrigerate for at least 30 minutes.
    3. Assemble the Kolokotes:
      • Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.
      • Roll out the pastry dough on a floured surface to about 3mm thickness. Cut into circles (about 10 cm in diameter).
      • Place a spoonful of the pumpkin filling in the center of each pastry circle. Fold the dough over the filling to form a half-moon shape and press the edges to seal.
      • Place the filled pies on the prepared baking sheet.
    4. Bake the Kolokotes:
      • Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown.
      • Allow to cool slightly before serving.
