    60g Kalamata olives, pitted and sliced
    30g fresh parsley, chopped
    30g fresh mint leaves, chopped (optional)

    60ml extra-virgin olive oil
    30ml red wine vinegar
    1 clove garlic, minced
    5g dried oregano
