  • 1kg ripe (flat) peaches, (optional) peeled, pitted, and finely chopped
    1kg granulated jam sugar
    Juice of 1/2 lemon
    A handful of fresh mint leaves, finely chopped
    Tip of a knife of orange food coloring

  1. 1. Prepare the Peaches:
    Begin by peeling the peaches. You can blanch them in boiling water for a minute, then transfer them to an ice bath for easy peeling.
    Once peeled, remove the pits and chop the peaches into fine pieces.

    2. Combine Peaches, Sugar, and Lemon Juice:
    In a large, heavy-bottomed saucepan, combine the chopped peaches, granulated sugar, and lemon juice.
    Stir well to combine, and let the mixture sit for about 30 minutes. This allows the sugar to dissolve and the flavors to meld.

    3. Cook the Jam:
    Place the saucepan over medium-high heat and bring the mixture to a boil.
    Reduce the heat to medium-low and let it jump cook for approximately 4-5 minutes, stirring constantly.
    The jam should thicken and reach the desired consistency.
    During the last few minutes of cooking, add the finely chopped mint leaves, the food coloring and stir them into the jam.
    This will infuse the mint flavor into the jam.

    4. Test the Jam:
    To check if the jam has reached the desired consistency, place a small amount on a chilled plate.
    If it wrinkles and holds its shape when you push it with your finger, it’s ready.

    5. Cool and Store:
    Once the jam is ready, remove it from the heat and let it cool slightly.
    Pour the warm jam into sterilized jars, leaving a small space at the top.
    Seal the jars and allow them to cool completely before storing them in a cool, dark place.

    Pro Tip

    To sterilize the jam jars, fill them to the top with boiling water. Pour the water out, fill in the jam, close the lid tight ans turn them upside down on the lid. The heat will make the lid expand and shut it tight on the jar.
