  • 250g all-purpose flour
    150g granulated sugar
    2 tsp baking powder
    1/2 tsp salt
    1 egg
    240ml milk
    80ml vegetable oil
    1 tsp vanilla extract
    150g Peanut M&M’s (plus extra for topping)

Method
    1. Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners.
    2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
    3. In another bowl, whisk together the egg, milk, vegetable oil, and vanilla extract until well combined.
    4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be cautious not to overmix; a few lumps are acceptable.
    5. Gently fold in the Peanut M&M’s into the batter.
    6. Spoon the batter into the muffin cups, filling each about two-thirds full.
    7. Top each muffin with a few extra Peanut M&M’s for a colorful and crunchy finish.
    8. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
    9. Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
