- Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners.
- In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
- In another bowl, whisk together the egg, milk, vegetable oil, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be cautious not to overmix; a few lumps are acceptable.
- Gently fold in the Peanut M&M’s into the batter.
- Spoon the batter into the muffin cups, filling each about two-thirds full.
- Top each muffin with a few extra Peanut M&M’s for a colorful and crunchy finish.
- Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
