Method

- Prepare the Galette Dough:
- In a large bowl, combine the all-purpose flour and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to incorporate the butter into the flour until the mixture resembles coarse crumbs.
- Gradually add the ice-cold water, mixing until the dough just comes together. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- Prepare the Filling:
- In a bowl, combine the sliced tomatoes, crumbled feta cheese, minced garlic, olive oil, salt, and black pepper. Toss gently to coat the tomatoes and feta with the seasonings.
- Assemble the Galette:
- Preheat your oven to 200°C (400°F). On a floured surface, roll out the chilled dough into a rough circle about 30cm in diameter.
- Transfer the rolled-out dough to a baking sheet lined with parchment paper. Leaving about a 5cm border, arrange the tomato and feta filling in the center of the dough.
- Fold and Bake:
- Carefully fold the edges of the dough over the filling, creating a rustic, free-form galette. Brush the exposed pastry with a bit of olive oil for a golden finish.
- Bake the galette in the preheated oven for 30-35 minutes or until the crust is golden and the filling is bubbly.
- Garnish and Serve:
- Remove the galette from the oven and let it cool slightly. Sprinkle fresh chopped basil over the top. Slice and serve warm or at room temperature.
Pro Tips- Tomato Selection: Use a variety of tomatoes for a colorful and flavorful filling, such as heirloom, cherry, and Roma tomatoes.
- Feta Texture: Crumble the feta into different sizes; some larger chunks create pleasant pockets of creaminess.
- Chill the Dough: Refrigerating the dough ensures a flaky and tender crust.
- Baking Balance: If the galette starts to brown too quickly, cover it loosely with foil and continue baking.
