Ingredients for 6-8 Servings

  • For the Galette Dough:
    200g all-purpose flour
    1/2 teaspoon salt
    150g cold unsalted butter, cubed
    60ml ice-cold water

    For the Filling:
    500g ripe tomatoes, sliced
    150g feta cheese, crumbled
    1 tablespoon olive oil
    1 clove garlic, minced
    Fresh basil leaves, chopped, for garnish
    Salt and black pepper, to taste

Method
    1. Prepare the Galette Dough:
      • In a large bowl, combine the all-purpose flour and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to incorporate the butter into the flour until the mixture resembles coarse crumbs.
      • Gradually add the ice-cold water, mixing until the dough just comes together. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
    2. Prepare the Filling:
      • In a bowl, combine the sliced tomatoes, crumbled feta cheese, minced garlic, olive oil, salt, and black pepper. Toss gently to coat the tomatoes and feta with the seasonings.
    3. Assemble the Galette:
      • Preheat your oven to 200°C (400°F). On a floured surface, roll out the chilled dough into a rough circle about 30cm in diameter.
      • Transfer the rolled-out dough to a baking sheet lined with parchment paper. Leaving about a 5cm border, arrange the tomato and feta filling in the center of the dough.
    4. Fold and Bake:
      • Carefully fold the edges of the dough over the filling, creating a rustic, free-form galette. Brush the exposed pastry with a bit of olive oil for a golden finish.
      • Bake the galette in the preheated oven for 30-35 minutes or until the crust is golden and the filling is bubbly.
    5. Garnish and Serve:
      • Remove the galette from the oven and let it cool slightly. Sprinkle fresh chopped basil over the top. Slice and serve warm or at room temperature.
