Method
    1. Preheat your oven to 180°C (350°F).
    2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion. Sauté until the onion becomes translucent.
    3. Add the spinach leaves and red bell pepper slices to the skillet. Cook until the spinach wilts and the bell pepper softens. Season with salt and pepper to taste.
    4. Lay out the beef slices on a clean surface. Divide the sautéed spinach mixture evenly among the slices, placing it on one end of each slice. Sprinkle crumbled feta cheese on top of the spinach mixture.
    5. Roll up each beef slice, securing the filling with toothpicks to create stuffed beef rolls.
    6. Heat a bit more olive oil in the skillet over medium-high heat. Once hot, add the beef rolls and sear them on all sides until browned.
    7. Transfer the seared beef rolls to a baking dish and bake in the preheated oven for about 20 minutes or until the beef reaches your desired level of doneness.
    8. Serve the stuffed beef rolls hot, and you can garnish them with some extra crumbled feta cheese and fresh spinach leaves if desired. Enjoy your delicious meal.
    Pro Tips
    • Quality Beef: Choose tender beef slices for the best results. Ask your butcher for recommendations.
    • Toothpick Technique: Secure the rolls firmly with toothpicks to keep the filling intact during cooking.
    • Perfect Searing: Ensure a hot skillet for a golden sear on the beef, sealing in the juices and flavors.
    • Customize Fillings: Experiment with fillings like mushrooms or sundried tomatoes for a unique twist.
