Ingredients for 8 Servings

  • For the Cherry Ice Cream:

    500g sweet cherries, pitted and halved
    400ml heavy cream
    200ml whole milk
    150g granulated sugar
    1 teaspoon vanilla extract
    Juice of 1 lemon

    100g dark chocolate, chopped

    100g of bought Chocolate chips

    1. Prepare the Cherry Base:
      • In a saucepan, combine the pitted and halved sweet cherries with sugar and lemon juice. Cook over medium heat, stirring occasionally until the cherries are soft and release their juices. Remove from heat and let it cool to room temperature.
      • Once cooled, blend the cherry mixture until smooth using a blender or food processor. Strain the mixture to remove pulp, if desired, for a smoother ice cream texture.
    2. Prepare the Ice Cream Base:
      • In a separate saucepan, combine the heavy cream and whole milk. Heat over medium heat until it starts to steam, but not boil. Remove from heat and let it cool slightly.
      • Stir the cherry puree into the cream mixture until well combined. Add the vanilla extract and mix thoroughly.
    3. Chill the Mixture:
      • Cover the mixture and refrigerate for at least 4 hours or preferably overnight. This allows the flavors to meld.
    4. Churn the Ice Cream:
      • Pour the chilled cherry mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
    5. Add Chocolate Chips:
      • In the last few minutes of churning, add the chopped dark chocolate. Let the ice cream maker incorporate the chocolate chips evenly into the ice cream.
    6. Freeze the Ice Cream:
      • Transfer the churned ice cream into a lidded container. Smooth the top with a spatula, cover, and freeze for at least 4 hours or until firm.
    7. Serve and Enjoy:
      • Scoop the sweet cherry ice cream with chocolate chips into bowls or cones. Garnish with fresh cherries or additional chocolate chips if desired.
