    2 cloves of garlic, minced
    2 carrots, diced
    2 celery stalks, diced
    400 grams of canned cannellini beans, drained and rinsed
    400 grams of canned diced tomatoes
    500 milliliters of chicken or vegetable broth
    1 teaspoon dried rosemary
    1 teaspoon dried thyme
    Salt and black pepper to taste
    30 milliliters of olive oil
    Grated Parmesan cheese for serving (optional)
    Fresh basil leaves for garnish (optional)

Method
    1. Heat the olive oil in a large, heavy-bottomed pot over medium heat.
    2. Add the Italian sausage to the pot, breaking it up with a spoon as it cooks. Cook until the sausage is browned and cooked through, about 5-7 minutes. Remove any excess fat if necessary.
    3. Add the chopped onion, garlic, carrots, and celery to the pot. Sauté the vegetables until they become tender, about 5 minutes.
    4. Stir in the dried rosemary and thyme, and cook for an additional 1-2 minutes to release their flavors.
    5. Pour in the canned diced tomatoes and chicken or vegetable broth. Bring the mixture to a simmer.
    6. Add the drained and rinsed cannellini beans to the pot. Season with salt and black pepper to taste.
    7. Reduce the heat to low, cover the pot, and let the stew simmer for about 20-25 minutes, allowing the flavors to meld together.
    8. Taste and adjust the seasoning if needed.
