For the Donuts:
- In a large bowl, combine 510g of flour, 7g of instant yeast, 5g of salt, and 50g of sugar.
- In a separate bowl, warm 300ml of milk and add 2 eggs, whisking together.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms.
- Add 112g of melted butter to the dough, mixing until smooth.
- Cover the dough and let it rise until doubled in size, approximately 1-2 hours.
- Roll out the dough and cut into long triangle shapes. Roll them to croissants. Allow them to rise again for about 30 minutes.
- Heat oil to 180°C and fry the croissant-donuts until golden brown. Allow to cool.
For the Filling:
- In a saucepan, whisk together 2 egg yolks, 50g of sugar, 30g of cornstarch, 240ml of milk, and 15ml of vanilla extract.
- Cook over medium heat until thickened. Allow to cool.
- In a separate bowl, whip 300ml of cold heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cooled custard.
Assembly:
- Once the donuts are cool, fill a piping bag with the custard filling.
- Insert the nozzle into the donuts and fill with the custard mixture.
