Ingredients for 12 Servings

  • Donuts:
    510g all-purpose flour or bread flour
    7g instant yeast
    12g salt
    50g sugar
    300ml milk
    2 eggs
    112g melted butter

    Custard Filling:
    2 egg yolks
    50g sugar
    30g cornstarch
    240ml milk
    15ml vanilla extract
    300ml cold heavy cream

Method
  1. For the Donuts:

    1. In a large bowl, combine 510g of flour, 7g of instant yeast, 5g of salt, and 50g of sugar.
    2. In a separate bowl, warm 300ml of milk and add 2 eggs, whisking together.
    3. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
    4. Add 112g of melted butter to the dough, mixing until smooth.
    5. Cover the dough and let it rise until doubled in size, approximately 1-2 hours.
    6. Roll out the dough and cut into long triangle shapes. Roll them to croissants. Allow them to rise again for about 30 minutes.
    7. Heat oil to 180°C and fry the croissant-donuts until golden brown. Allow to cool.

    For the Filling:

    1. In a saucepan, whisk together 2 egg yolks, 50g of sugar, 30g of cornstarch, 240ml of milk, and 15ml of vanilla extract.
    2. Cook over medium heat until thickened. Allow to cool.
    3. In a separate bowl, whip 300ml of cold heavy cream until stiff peaks form.
    4. Gently fold the whipped cream into the cooled custard.

    Assembly:

    1. Once the donuts are cool, fill a piping bag with the custard filling.
    2. Insert the nozzle into the donuts and fill with the custard mixture.
